Here are 2 shots which I took yesterday from Kemaman. I reached Kemaman at about 7.00pm and it was raining from Gebeng, Kuantan. Tell me what you think...
This was right outside of Rachel's house in Kemaman. Too bad there was a telephone line smacked right in the middle of the picture.

This second shot is about 5km away from Kemaman town. I just cannot "tahan" but to ask permission from Rachel to stop by at the road side.

So red! Hardly see sunset so red around here, it's usually more of a yellowish tone.
To answer your question, I shoot in both raw and jpeg format. I mostly do some minor adjustments in photoshop like adjusting the sharpness etc. to counter the loss of detail when save for web.
I'm not really into extreme editing as I believe in originality in a photo but if you really want to, try the following site for velvia technique in photoshop. That will give a boost to your photos. Don't over do it though. Hope that helps!

for the 2nd picture, i think u should use larger aperture, coz it is too dark.

garfield, yah. i've noticed. i tried to brighten it up using canon's software but it wasnt nice. but the whole idea was to take the sunset shot. its not too often you'll get a sunset so orangy red...thanks for the tip though.
better not to depends on software too much, do it manually with the lens will have better result.
anyway, there is actually a way to fake this effect since ur camera is a digital ones, u may switch the color settings to Red=100%, Green=-100% and Blue=-100%, then u will be able to fake the image like this pictures.
but still, getting the real scene is a more interesting thing to do

Nah, I'm not qualify for that. Just sharing information. Also, to counter the loss of sharpen due to down-sizing your images, you can apply unsharp mask filter in photoshop. I usually set it at 60% 0.5px.
cc, oh ok. but i do not have photoshop. im only using canon's bundled software. the ori photoshop is very expensive for me to purchase for now. im trying to get a pirated one....heheheh *grins*

u can always download a software called GIMP which it totally free and it is similar to photoshop.
You can actually download a 30 days trial version to test it first.
